The most general defintion of a sensor is a device that is acting as an interface between an electronic circuit and the environment. In a car, for example, hundreds of sensors measure temperature of the engine, air pressure in a tire, light intensity of the surrounding, magnetic fields, acceleration of the car, rotation of the engine, humidity, etc.
